Alright, I want to know…what was the lowest temperature at your house this past weekend?
I’ll start.
8 degrees…yes, it was cold
As most of you know, we have a certain Beagle that lives with us by the name of Emmi Louise. Emmi is two years old now, and is probably the most spoiled dog that ever lived. Of course I shouldn’t complain since I’m part of the reason she’s so spoiled. However, I had to come to grips that we have created a monster-a very cute monster-but a monster nonetheless. Allow me to tell you my tale:
This past Monday my father told me that he and my mom were traveling to Charlotte, NC to pick up some equipment for a job that we were doing later in the week. He then asked me to head home after I got off work to walk and feed Emmi. This wasn’t an unusual request as I often take care of Emmi when my parents are away, but his next request was…
“Molly, make sure that you mix her food with warm water-not too much, now-and make a gravy.”
“Excuse me? Make a gravy?”
“Well, it’s the only way she’ll eat it, and make sure you don’t pour too much water or she won’t eat that.”
“You have spoiled this dog…I mean she IS a dog.”
“Yes, but isn’t she the best? She’s just a doll.”
“Gag me with a fork…”
So what did I do? Well, I went home, walked Emmi, measured out her food, and mixed it with warm water. She ate it right up. A monster, folks, a terribly cute, cuddly, and furry monster…
Well, we finally received some snow! I would say that the grand total at my house was 3 inches. Not much, but it’s better than nothing! So, how about you? How much did you get?
We here at Mountaineer Heating and Cooling are big fans of Chick-Fil-A. We’ve been known to frequent the Boone location two to three times a week, yes, we really like it
Not only do the serve really great food, they’re also very loyal customers of ours, and we’re so grateful for them!
I’ve always enjoyed their chicken nuggets, but since I’m trying to be a bit more health concious this year I resigned to the fact that while I could eat some in moderation, I would have to cut back. Sigh. However, the good people at Chick-Fil-A came to the rescue and released their new Grilled Chicken Nuggets! Hallelujah! They also released their new Chicken Tortilla Soup which looked delicious.
So today I set out to try these new menu items for lunch. At 12:20 I hopped into my car and drove to Chick-Fil-A (which is only five minutes from my office!), ordered my lunch, drove back to the office and gave them a try. I started with the Grilled Chicken Nuggets dipped in my favorite Chick Fil A Sauce. They were so good! Very tender and moist, and perfect with the sauce. I then tried the soup which was equally delicious; just the right amount of spice and flavor with a little kick topped off with crunchy, tortilla strips that gave great texture to the dish.
So, on a scale of 1-10, 1 being NEVER EAT AGAIN 10 being COULD EAT WEEKLY I am giving the new menu items a 10! Go, and get yourself some today, you’ll be glad you did!
Well, tonight is the BCS National Championship game! Since I’m a huge fan of the SEC, I’m super excited to see that two teams from the SEC will be playing, and that a team from the SEC will be named National Champs for the 6th consecutive year! Now, the question that begs to be asked is this: who ya got? Meaning, who’s going to take home the title?
Will it be:

or
The Alabama Crimson Tide

Hello again, friends!
I woke up to howling winds and blowing snow this morning. Although I’m not complaining. I really like cold weather, and I’m excited because it means that the local ski resorts can make snow so I can go skiing
! Another great thing about colder weather is soup! I’m a big fan of a good, warm soup on a cold day and thought I would share one of my favorite recipes with you!
This is a family favorite that we make every year…
Cream Cheese Potato Soup
6 Cups Water
7 Chicken Bouillon Cubes
8 ozs. Cream Cheese, Cubed
Diced Ham
1 Bag Frozen Hash Browns

In a large stock pot combine water, bouillon, and cream cheese. Bring to a boil and let simmer until all ingredients are combined and melted. Add ham and hasbrowns and let simmer until heated through. Enjoy!
*You can add some fresh dill that has been finely chopped if you like
If I’m going to be completely honest with you, I must confess that I’m a little sad at the moment. Why? Well, I’m really wanting some snow, and according to the forecast (which in Boone can change in an instant) we won’t be getting any soon…sigh. I realize that some of you might not share my sadness, and you are actually relishing the fact that there is not snow in the forecast. So I am happy that you’re happy, but when you love to ski (like me) snow is needed
Hopefully we’ll see some of the white stuff soon…
